Small Batch Fudge Brownies


My Small Batch Chewy Chocolate Chip Cookies were so popular that I'm making more small batch recipes to share with you! And, based on the response I received on Instagram, you are all VERY excited to try this new recipe!

I'm actually thrilled that you are excited about small batch baking because it is something I have been doing for years, but I always felt that most people wanted large-scale recipes.



I frequently baking in small batches since I bake so often and don't always prefer to freeze things. I like having fresh-made and fresh-baked goods!


Reasons to adopt small batch baking:

1) You have a small household and thus not enough people to share 16 brownies or 24 cookies with (so you don't eat them ALL!)

2) You like variety! Making small batches means you can make several different things instead of lots of one thing.

3) It's easier to manage making manually without a mixer. You can make most small batch recipes with just a bowl and a whisk or a spatula.



If you like fudgy brownies, then get ready for a treat!

This recipe makes dense, moist, squishy, fudgy brownies! They are intensely chocolaty and so satisfying with the perfect salty-sweet balance.



How to make fudgy brownies:

1) Follow the order of ingredient mixing. Beating eggs with sugar helps to dissolve sugar which keeps it in syrup form so that it holds on to the moisture and retains it.

2) Use brown sugar - these brownies have this irresistible savory taste and rich caramel-like flavor thanks to brown sugar! It also helps to keep these brownies extra fudgy.

3) Do not over-bake. A skewer should come out with just a few moist crumbs attached. If it comes out clean, then they may be a bit more dry. But this recipe is so foolproof that they will still be great! Check them after 15 minutes for doneness


If you haven't already noticed, these brownies have that perfect wrinkly shiny crust! It's the sign of a great brownie because it means the sugar is well dissolved, which as I mentioned above, means that they will be fudgy!

How to get a shiny crust on brownies:


The number one way to achieve a shiny crust on brownies is to dissolve the sugar!


So grab your loaf pan, but don't plan on making banana bread.... you're gonna make brownies!

All you need is:
- 1 egg
- 1/2 cup sugar
- 1 bar of chocolate
- 3 tablespoon of butter

It's the easiest thing ever and you will be thrilled with the results!

Small Batch Fudge Brownies
makes 8 brownies


3 oz (85g) dark chocolate (I also love these bittersweet callets)
3 tbsp (42g) unsalted butter
1 large egg, at room temperature
½ cup (110g) packed light brown sugar
½ tsp (5ml) pure vanilla extract
¼ tsp salt
¼ cup (35g) all-purpose flour
chocolate chips for topping


Preheat oven to 350°F. Line a 9x5 or 8x4-inch loaf pan with parchment paper.

Melt together chocolate and butter in the microwave in short bursts with frequent stirring until completely melted, smooth and glossy.
Beat egg with sugar, vanilla and salt in a large bowl with a whisk or electric mixer for several minutes until pale, thick and fluffy. If using a mixer it will take 2-3 minutes. Beat in warm chocolate mixture until evenly blended. Sprinkle in flour and fold it in until well incorporated and smooth. Spread batter into prepared pan and sprinkle chocolate chips on top.

Bake for 15-20 minutes until a skewer inserted into the center comes out with a few moist crumbs.

  3. Hi, can I substitute the bar of chocolate with cocoa powder, I can't find chocolates bar to bake this, so I'd like to know if it's okay to swap and what would be the appropriate amount?

    1. Hi! This recipe as written to provide the results shown requires chocolate. Using cocoa powder in place of chocolate will change the recipe.

    2. Hi! I understand :( but because of the quarantine there are not many things in the sweet section, I went to the store and didn't find chocolate bars to melt.

    4. Hi! This recipe only works with chocolate. You can search other recipes that use cocoa instead. I will hopefully post one in the next month.

  4. I baked them for 35 mins and they were still undercooked. I followed the recipe to the T.

    1. Hi! These only take 15 minutes to bake, so I would suggest that you definitely have your oven checked. You can try using an oven thermometer.

  5. Just made these and they are so good! Thank you for the quick bake! @kinga - this may just be me, but I've found that when brownie recipes specify "fudge", they always come out looking and feeling under-baked, but after cooling a bit, they are a true fudge-y/dense/moist consistency with a crinkle top instead of looking cake-y. Not sure if this is what you're experiencing...

    1. Hi! Yes, brownies need to cool completely to set and that's when they develop the fudge texture.
