Peanut Butter Cinnamon Sandwich Cookies

Who doesn't like a sandwich cookie?

Most of us grew up with Oreos right?

Remember Fudgee-O's? Those are cool.

Later they stepped it up by putting double stuff inside of them, and around the holidays they like to dip the whole darn thing in white chocolate. Nuts.

Sandwich cookies are fun - two crisp cookies with a creamy filling. You can pull them apart and lick the middle until it's gone. You can dunk them in milk and let them get a bit soft before taking a bite.

Become a kid again and make some sandwich cookies in your own kitchen.

Maybe put some pigtails in your hair and smear red lipstick all over your face too. Or  not. Whatever.

These aren't your usual cookies though. I combined the flavours of cinnamon and peanut butter and surprised the crap out of myself. It's so good!

These little cookies bake up super crisp. I roll out the dough to 1/8-inch thickness and use a round cookie cutter with a diameter just shy of 2-inches to cut out little disks.

After baking them off and letting them cool completely, I spread a teaspoon of creamy peanut butter on the flat side of one cookie and gently press another one on top to make a little sandwich.


PS - my mom would call these "sangwich" cookies. Drives me nuts!

The low ratio of fat and relatively high ratio of sugar in this recipe keeps these cookies crisp.
