Blueberry Fig & Banana Breakfast Bars that are way too healthy


Today I baked something healthy.

I was totally out of my comfort zone and it felt a little weird.

I made these utterly healthy Blueberry Banana Breakfast Bars that are all natural and loaded with fiber.

They have fruit, oats, nuts, seeds and egg whites.

They don't have butter or egg yolks, wheat flour and barely any sugar.

They need butter, egg yolks and sugar.

They're good. They're moist. They're definitely a breakfast item. Let me tell you what I did....


First I got a bunch of healthy stuff, like oats, almonds, sunflower seeds, dried figs and blueberries.

Then I got a bunch of other healthy stuff like bananas, peanut butter and egg whites.

Then I mixed the two healthy things together to make one healthy thing.

Then I covered it with flax seeds and baked it all in the oven.


Oats - full of beta glucan, a soluble fiber, that helps keep you regular, keeps you fuller longer and keeps your cholesterol in check.

Bananas - full of fiber and potassium which is important for nerve function and muscle contraction. It can also help to reduce the risk of hypertension.

Almonds - again, high in fiber, potassium, vitamin E  and monounsaturated fats.

Blueberries - they taste really good, but are also a source of Vitamin C and antioxidants, which help to fight cancer-causing reactions in our bodies.

These are all good things and my mother-in-law would not be impressed if I mucked it up with butter and sugar.


Well M-I-L, I love ya, but let me tell you...if you want that nice chewy texture that you remember from those delicious cookies that you were talking about that had like 1/2 cup of butter per dozen, well then you need it.

Mmmm...cream together some butter with dark brown sugar before adding in the rest of these great ingredients and then you have a winner. You see, you can't always win. If you want healthy but still tasty when it comes to dessert-type stuff, then you have to invite butter and sugar to the party. If you leave them out, then flavour and great texture might not show up either and your party could royally suck.


All in all, these are a good hunger fix. But I still miss my best baking buddies....you know who you are.
