The official Breakfast Club Cookie


You've listened to me go on and on about the Cookies for Breakfast club for months now.

Clearly I have a serious problem.

Last week I attempted to quit cold turkey and enrol myself in the Oatmeal for Breakfast club. It shouldn't have been that hard since I really love oatmeal. Right?

Wrong.

I still eat oatmeal for breakfast....followed by at least two cookies.

Fail.

Instead of kidding myself and living in denial, I decided to create a cookie that really can be considered breakfast-worthy by the general public. It turns out this was an incredible idea and the results are pretty freakin' delicious.


These cookies are very much similar to a granola bar. It's like trail mix all stirred up into soft and chewy cookie dough.

I mixed in rolled oats, whole almonds, dried cranberries, raisins, flax seeds and sunflower seeds. The dough is made with both white and whole wheat flour, sweetened with brown sugar and honey, and flavoured with a generous teaspoon of ground cinnamon. Leaving the almonds in whole form adds some great crunch and toasty flavour, since they roast up slightly while the cookies bake. Eating one of these cookies creates a bit of sensory overload, making it perfect for waking you up in the morning!

And how about fiber? Got it! Almonds, whole wheat flour, flax seeds, sunflower seeds, dried fruit.....it is all a source of fiber. Flax and sunflower seeds are sources of essential fatty acids that help our brains function more efficiently - I could definitely use that in the morning. There are B vitamins, Vitamin E, loads of minerals... I mean, come on! This is totally legit.

To top it all off, the scent of these official Breakfast Club/Trail Mix Cookies baking in the oven will make your neighbours swoon. Don't be surprised if you get a few knocks at your door from people asking to "borrow a cup of sugar". Surrrre.

I think this will solve my problem. I'm happy to announce that the Cookies for Breakfast club is still in production and feeling good! I hope this delicious recipe will make you feel more comfortable about joining this club.
